Endurance Restaurant Range, LP gas, 72, (12) 30,000 BTU burners with lift-off burner heads, (1) standard oven (left), (1) convection oven (right), stainless steel front, sides, backriser & high shelf, fully MIG welded frame, 6 adjustable legs, 430,000 BTU, CSA Flame, CSA Star, NSF ( Vulcan - 72SC-12B ) - To save space and eliminate the need to purchase multiple pieces of equipment, the Vulcan 72SC-12B Endurance™ LP-gas-powered range measures 72 inches wide by 41 inches deep by 58 inches tall and is equipped with 12 open-top burners, a standard oven, and a convection oven. This unit outputs 430,000 BTUs per hour, has a 1-inch rear gas connection, and includes a rear manifold and pressure regulator. While its front, sides, backriser, and lift-off high shelf are made of rust- and corrosion-resistant stainless steel, its frame is fully MIG welded for added strength. So the unit doesn't wobble or rock during operation, it's built on 6-inch adjustable legs.To reduce gas consumption, one shrouded flashtube pilot system powers two burners; each burner outputs 30,000 BTUs and features a heavy-duty lift-off cast grate with an integrated aeration bowl for added efficiency. While the six front grates measure 12 inches by 121/2 inches to accommodate small or medium cookware, the six rear grates are 12 inches by 141/2 inches to support large sauce pans or stock pots. Operators can adjust burner heat with the high-temperature-resistant burner knobs that remain cool to the touch through use. When food debris needs to be removed from beneath the burners, the grates can be lifted, and the extra-deep crumb tray can be pulled out.While a standard oven is built into the Vulcan 72SC-12B commercial range's left side, the right side features a convection oven. To perform various tasks, these ovens operate differently. The standard oven uses radiant heat, and the convection oven relies on a fan to circulate hot air for quick, efficient baking. Both ovens can be set to low heat or set to a temperature between 250 and 500 degrees Fahrenheit. Despite the different interior dimensions, both ovens accommodate full-size pans. The standard oven features a baker's depth with two adjustable racks, and pans can be inserted side to side or front to back. The convection oven comes with three racks and accepts pans inserted side to side. To ease pan insertion and removal, the doors feature a spring mechanism that doesn't require adjustment, and the handles remain cool to the touch.
